The cooking police are going to lock me up

I’m a recent stay at home mom. Something that I’m using my time for is learning to cook. I’m a little ashamed to admit that before when I worked full time, dinner was usually Hamburger Helper and canned green beans or something similar.

Cooking isn’t easy and to me, it isn’t much fun. I think that is because I’m not very good at it though. Oh my gosh, you should have seen the chicken casserole concoction I made last night.  I’m trying to use up what is in my pantry to be replaced with from scratch meals and fresh ingredients. One step at a time, right? I can’t afford to toss everything out and start over. So I decided to get creative.
Anyway, last night I layered white rice, chopped grilled chicken (some of the ready cooked frozen stuff that you just pop in the oven-it was pretty gross but I didn’t know that at the time) and then a mixture of cream of mushroom soup, chicken broth, onion soup mix, and milk. Lord it was terrible stuff, but bless my family’s hearts, they ate it. I tried to give the leftovers to the dog and she turned her nose up to it. That is what I get for improvising. 
I’m determined to keep trying and get better. I’m not the type to flunk out and give up. Unless it is math, but that is a different story.
